A perfect Caesar

You can order Caesar Salads all over the world, it must be one of the most international dishes there is. The principles are often the same, but they can look and taste very differently.

The perfect Caesar Salad feels fresh and healthy. It's a rather big portion, so you can have it as your main meal.

The meat
I think you have to have chicken in the Caesar Salad to make it worth eating. The chicken breast is sliced in a nice way and the chef hasn't used tons of oil frying it.

The green stuff
You can vary the lettuce, but I am not too keen when you get a portion with too big salad leaves. It might look artistic, but is very unpractical.

The dressing is key
The perfect Caesar has a salty dressing and it gets it's saltiness from capers and anchovies. If a restaurant try to be a bit innovative and add the anchovies directly in the salad, not in the dressing, they do it in the wrong way! Ouch, hate it when they do it that way and they would automatically get a 2/10 rating from me. Please teach the chef to mix a proper dressing!!!

Cheese
Parmesan of course - a bit all over the salad, but not too much.

The bread
Croutons - a vital part of the salad. Should be small, 1 cm x 1 cm maximum. Make sure you fry them is a good oil, I don't want to the taste to be bitter as it can be sometimes.

Other bits and bobs
I like to add tomatoes and avocados to my Caesar. That's my preference :-)
